Dr. Jayalaxmi Baddi currently serves as an Assistant Professor in the Department of Food Technology, FLAHS at M. S. Ramaiah University of Applied Sciences, Bengaluru.

Dr. Jayalaxmi Baddi is an accomplished Food Scientist and Nutritionist with more than ten years of experience in research, teaching, and extension activities. She earned her Ph.D. in Food Science and Nutrition from the University of Agricultural Sciences (UAS), Bengaluru, and was awarded with the University Resident Merit Scholarship (URMS) for securing the highest Overall Grade Point Average (OGPA) during her doctoral programme (2012–2015). And master’s research entitled “Extraction of total polyphenols and dietary fiber from mango peel and its application in selected food products”, (2010–2012). was undertaken as part of an Indo–European collaborative initiative, the NAMASTE Project, which focused on the application of sustainable technologies for the valorisation of food processing by-products into novel foods and feeds. This project was supported by the Department of Biotechnology (DBT), Government of India, in collaboration with UAS, GKVK, Bengaluru. She has also qualified prestigious national eligibility examinations, including UGC-NET, KSET, and ICAR–JRF.

Dr. Jayalaxmi Baddi has areas of research specialization encompass food processing research on extraction of food bioactive like dietary fiber, polyphenols compounds from fruits and vegetables bio wastes; development of plant-based dairy alternatives and synbiotic millet-based foods, millet and bakery technology. She also focuses on the design and development of ready-to-eat (RTE) and ready-to-cook (RTC) food products with enhanced nutritional, functional, nutraceutical, and sensory qualities, along with food packaging and shelf-life studies. Her clinical research includes animal experiments, glycaemic index study, and clinical and community nutrition, with particular emphasis on lifestyle and metabolic disorders such as diabetes, cardiovascular diseases, and obesity, as well as nutrition counselling and assessment.

Dr. Baddi has published research articles in reputed national and international journals and has authored books and training manuals. Her academic excellence has been recognized through several national and international awards, including the Young Scientist Award and Best Thesis Award. Dr. Jayalaxmi Baddi actively contributes to academic and professional bodies as a member of the Board of Examinations (BOE), external examiner, session chair at conferences, and research supervisor.
