Faculty of Life and Allied Health Sciences

  • Department

    Department of Food Technology

Dr. Divyashree S, currently serves as an Assistant Professor in the Department of Food Technology, FLAHS at M.S. Ramaiah University of Applied Sciences, Bengaluru.

Dr. Divyashree is a microbiologist where she worked as a senior research fellow funded by ICMR on “potential probiotic Lactobacillus species for the control of food borne pathogens”. She is truly an enthusiastic young researcher with great talent and extraordinary research ability in the field of molecular mycotoxicology, Mycology bacteriology and food microbiology. She pursued doctoral degree on Ph.D on research entitled “potential antimicrobial agents from probiotics against pathogens associated with food”. Her research work aimed at screening and isolation of potential probiotics from multiple traditional fermented foods and proved broad spectrum antimicrobial probiotic Lactobacillus species for their efficacy to inhibit the growth of food borne pathogens such as Salmonella Typhimurium MTCC 3224 (Salmonella enterica serovar Typhi), shiga toxin producing Escherichia coli 0157:H7 and Listeria monocytogens ATCC 7644. She also proved Lactobacillus strains effects through in vivo experiments using BalB/C mice to know the mechanisms of pathogenesis as well as to know the potential effects of Lactobacillus to prevent the diseases caused by these pathogens.

Dr. Divyashree has worked extensively in the area of food microbiology, mycology and bacteriology and her findings have important implications for the management of food borne diseases. She published in SCI index journals such as Food Bioscience, South African journal of Botany, Food Biotechnology, Biotechnology Reports, Frontiers in Microbiology, Probiotics and Antimicrobial Proteins, Scientific Reports, Current Microbiology, Journal of Crop Health, Water Practice and Technology, Chemistry Select, Journal of Heterocyclic Chemistry, Letters in Drug Design and Discovery, and Synthesis. She was instrumental in designing and validating new protocol to study in detail about the probiotics potential effects for the prevention of food borne pathogens with respect to preliminary, molecular and immunological studies.
