Dr. Deepa M. Madalageri is an Assistant Professor in the Department of Food Technology at the Faculty of Life and Allied Health Sciences, Ramaiah University of Applied Sciences (RUAS). She holds a Post-Doctoral Fellowship from McGill University, Canada (Department of Bio-resource Engineering, 2016), following her Ph.D. in Food Science and Nutrition (2015) from the University of Agricultural Sciences (UAS), Dharwad, where she secured Gold Medals for highest merit in M.H.Sc. and Ph.D. Her key areas of expertise and interested research include Food Product Development (especially pulse-based and instant foods), Nutraceuticals and the utilization of Bio-waste of fruits for health and nutrition security, Fermented Products (specifically little millet applications), Precision Nutrition for inflammatory and autoimmune diseases, and the study of Plant-based Dairy Alternatives. Dr. Madalageri is a recipient of the prestigious DST INSPIRE Fellowship and the Young Women Scientist Award in Food Technology (2025). Her research has been published in numerous journals, covering topics such as fruit leathers, black rice, micronutrient deficiencies, and the gut-skin connection.

  • Functional Foods and Nutraceuticals: Development of bioactive-enriched foods, antioxidant-rich formulations, and health-promoting dietary components, including the utilization and valorization of agricultural by-products.
  • Millet-Based and Gluten-Free Product Development: Formulation of innovative foods using millets, such as value-added functional beverages and gluten-free bakery products.
  • Plant-Based Dairy Alternatives: Research on developing and improving the sensory, nutritional, and functional properties of pulse-based milk, yogurt, and ice cream.
  • Fermented Foods and Gut Health: Innovation in fermentation-based products with a focus on probiotics, prebiotics, and microbiome modulation for improved gut health.
  • Anti-Inflammatory and Therapeutic Diets: Designing and evaluating dietary interventions for managing chronic conditions such as autoimmune diseases, metabolic disorders, and chronic inflammation.
  • Food Waste Valorisation and Sustainability: Extraction of bioactive compounds from fruit and vegetable by-products, supporting circular food systems and low-cost nutrition solutions.
  • Maternal and Child Nutrition: Addressing public health issues such as micronutrient deficiencies in pregnancy, GDM-focused nutrition, and developing complementary feeding strategies.
  • Food Processing and Innovative Technologies: Use of modern techniques such as ultrasound-assisted processing, dehydration technologies, and non-thermal preservation methods to improve shelf life and nutrient retention.
  • Community and Public Health Nutrition: Work involving nutritional assessment, dietary surveillance, behaviour change communication (BCC), and evaluating community-level nutrition interventions.
  • Microgreens and Biofortified Foods: Researching the impact of processing (including gamma radiation) on nutrient retention, antioxidant activity, and functional value.
